Thai Red Curry Paste

This basic red curry recipe and method shows you exactly how to make your own curry base at home. All Thai red curry pastes start with the same base ingredients. They are lemongrass, galangal, coriander root, garlic, shallot, and kaffir lime zest. Then, for each type of paste, there are additional spices added so you can obtain the right flavor in your Massaman, Prik Kaeng Ped, Panang, or other red curry. It's so nice to be able to make these at home and control exactly what goes in, and the texture of your finished curry dishes will be so much nicer than with the packaged products.

Ingredient List:

5 - 6 Sun Dried Thai Chili

4 Tablespoons Lemon grass (thinly sliced bottom of stalk)

2 Tablespoons Galangal (peeled and cleaned, cut into small pieces)

5 Tablespoons Red Shallots (roughly chopped)

1 Tablespoon Coriander Root (finely chopped)

1 Tablespoon Kaffir Lime (grated kaffir lime peel)

3 Tablespoons Garlic

1 teaspoon Thai shrimp paste

2 teaspoons Salt

Directions:

1: Cut and measure all the ingredients.

2: Grind all the ingredients together, one by one, starting with the hardest and working down to the softest until a fine red paste is obtained.

Thai yellow Curry Paste








 Ingredient List:

2 Tablespoons Galangal (Cleaned and sliced)
2 Tablespoons Lemon grass (Bottom 4 inches, sliced)
2 Tablespoons Red Shallots (Thinly sliced)
3 Tablespoons Garlic (Thinly sliced)
1 Tablespoon Coriander Root (Cleaned well, cut into small pieces)
2 Tablespoons Turmeric (Fresh turmeric rhizome, cleaned and cut)

3 Thai Long Chili (Use Yellow or Orange Chilies)
4 Kaffir lime leaves (Stems removed, finely chopped)
1 Tablespoon Cumin (Ground cumin seeds)
1 teaspoon Coriander Seeds (Ground coriander seed)

1 teaspoon Paprika powder
1 teaspoon Turmeric powder
1/2 teaspoon Cloves (Ground cloves)
1/2 teaspoon Cassia cinnamon (Ground cinnamon)
1/4 teaspoon Sun Dried Thai Hot Chili (Ground dry hot chili)
2 teaspoons Thai shrimp paste
2 teaspoons Coconut Sugar
2 teaspoons Fish Sauce
2 teaspoons Vegetable Oil

Directions:

1: Cut and measure all the ingredients.

2: Grind all the ingredients together, one by one, starting with the hardest and working down to the softest until a fine brownish yellow paste is obtained.

Thai Red Curry Paste





Ingredients :
8 dry red spur chilies (soaked in water for about 10 minutes to soften them)

10 - 14 small cloves of garlic
5 small shallots (Thai shallots are the size of grapes, so it's about 2 tablespoons worth)

½ teaspoon cumin powder
½ teaspoon coriander powder
1 tablespoon finely sliced coriander roots
1 tablespoon finely sliced galangal
Skin of ½ kaffir lime

½ teaspoon salt
3 teaspoons white pepper corns

1 tablespoon finely sliced lemongrass

½ teaspoon of shrimp paste

Easy Thai Curry Paste


 
  • Ingredients
    Serves: 3 
  • 10 dried red chillies
  • 2 tablespoons garlic, finely diced
  • 2 tablespoons lemongrass, finely diced
  • 1/2 tablespoons galangal, finely diced
  • 1 teaspoon lime zest (kulit limo)
  • 5 coriander stems, chopped
  • 5 tablespoons onion shallots, finely diced
  • 1 teaspoon shrimp paste



Directions
Preparation:15min  ›  Ready in:15min

  1. Soak the dried chillies in hot water for about 10 minutes or until softened.
  2. Place the garlic, lemongrass, galangal, lime zest and coriander stems into a mortar and pestle and pound into a paste (alternatively, use a food processor).
  3. Add the shallots and soaked chillies and pound or process into a paste. Finally add the shrimp paste and process until smooth.

Easy Homemade Red Curry Paste

Serves: 12 ounces
Ingredients
  • 3 large dried red New Mexico Chili peppers
  • 10 small dried chiles de arbol
  • ½ c. coarsely chopped shallots
  • ¼ c. coarsely chopped garlic
  • 1 Tbsp. coarsely chopped fresh ginger or galangal (iaos) root
  • 1 Tbsp. ground coriander (ketumbar)
  • 1 tsp. ground cumin (jinten)
  • ½ tsp. pepper
  • ½ tsp. salt
Instructions

  1. Remove the stems and seeds from the dried chilies. Use your hands to tear the chilies into small pieces, then soak in a bowl of warm water for 10 minutes. Wash your hands thoroughly with soap and water.
  2. Meanwhile, place your shallots, garlic, ginger or galanga root, coriander, cumin, pepper, and salt into the bowl of a food processor or blender.
  3. Once the chilies have finished soaking, drain the water off and add them to the food processor.
  4. Use the processor to grind the ingredients into a paste. You may need to scrape the sides of the bowl down as you go.
  5. Store in a glass container for up to 1 month in the fridge, or freeze for up to 1 year

Making Bread

Making your own bread needs a little hard work but it's great fun and the delicious smell and taste of freshly baked bread makes it all worth while.
You can make a white or wholemeal loaf from this recipe depending on which flour you use.

What You Need:

Ingredients:
  • 225g (1 ½ Cups) Strong plain white flour or plain wholemeal flour
  • 1 level teaspoon salt
  • 1 level teaspoon sugar
  • 15g (1 level tbspoon) soft tub margarine
  • 1 sachet (6g) easy blend dried yeast or fast action easy blend dried yeast
  • 150 ml (2/3 cup) warm water - NOT HOT!
What To Do:
  1. Get an ADULT to help!
  2. Wash your hands thoroughly in soap and water.
  3. Collect all the tools and ingredients together.
  4. Put the flour in the mixing bowl and add the sugar and the salt.
  5. Add the margarine and rub into the flour using your finger tips.
  6. Add the dried yeast and stir into the flour mix
  7. Add all the water at once to the flour mix and stir together using the wooden spoon.
  8. Use your hands as the dough gets tough and when it leaves the sides of the bowl clean (add a little more flour if it is too sticky), put the dough onto a floured surface.
  9. Now the hard work! The dough will feel tight and lumpy and you must 'knead' it to make it smooth and stretchy. Push your hands into the dough, gather it back into a ball, turn it slightly and then repeat. Do this for about 5 minutes until the dough feels smooth.
  10. Shape the dough into your own design or use one of the ideas below and place it on the greased baking tray. Cottage LoafPlaitScroll

  11. Cover the shape with the oiled cling film to stop it drying out and then put the tray in a warm place so that the yeast can work and make the dough rise. In winter this might be the airing cupboard, or in summer the kitchen itself may be warm enough.
  12. Now set the oven to 230°C/450°F/Gas Mark 8
  13. When the loaf shape has about doubled in size (after about 30 minutes), remove the cling film and place the tray in the centre of the oven.
  14. Bake the loaf for 20-25 minutes. It should be golden brown and sound hollow when tapped underneath.
  15. Put the loaf on a wire rack to cool and the tuck in!

AnekaNews.net - Tak dinyana, kue yang rasanya lezat dan harganya pun lumayan mahal ini, terbuat hanya dari 3 jernis bahan utama saja yaitu tepung terigu, air dan gula merah. Tapi lagi-lagi yang terlihat mudah dan sederhana itu belum tentu mudah pula membuatnya loh.. :)
Kue Nopia ini tergolong unik karena bentuknya mirip seperti telur dan rata pada salah satu sisinya. Kue ini merupakan kue oleh oleh khas dari kota Purwokertio, jika Anda berkunjung ke sana pasti akan menemukannya di sepanjang jalan Purwokerto – Sokaraja.
Letak keunikannya adalah pada proses memanggangnya yang berbeda dari kue manapun di dunia ini. Proses memanggangnya masih sangat sederhana yaitu dengan tungku mirip sumur terbuat dari tanah liat yang dalamnya dibakar menggunakan batok kelapa atau kayu bakar pelepah pohon kelapa.
Setelah panas baru kemudian Kue Nopia ini ditempelkan di dinding tungku.
Dalam keadaan tungku yang masih panas menyebabkan kue nopia ini mengembung dan menciptakan kue yang unik dan khas. Bisa terbayang bagaimana sulitnya proses pemanggangan kue nopia tadi khan? Tapi jika Anda penasaran dan ingin membuatnya, langsung saja disimak resep berikut ini.

Cara Membuat Kue Nopia Lezat Khas Purwokerto

Berikut ini adalah urutan

Campurkan tepung terigu dengan air kemudian diaduk aduk sampai rata.
1. Adonan tepung terigu dibentuk bulat sebesar ibu jari dan pipihkan pada bagian tengah diberi gula merah yang telah dihaluskan. Tutup gula merah dan bentuk bulat kembali.
2. Selanjutnya panaskan pemanggang kue nopia dengan kayu bakar sampai apinya mati dan ambil abu dan baranya agar tidak mengotori kue.
3. Adonan Kue Nopia ditempelkan di dinding bagian dalam panggangan kue selama 30 Menit. Angkat kue yang telah mengembang siap untuk dinikmati. simpan kue dalam plastik atau toples agar kue nopia dapat bertahan lama.

Anda pasti bingung bagaimana kalau Anda tak memiliki pemanggang khusus sebagaimana tersebut di atas, bisa tidak? Mungkin bisa saja, caranya sama open dipanaskan dulu baru masukan adonan kue nopia yang telah siap tadi..
