Bumbu Cajun

VERSI #1

Bahan bumbu:
  1. -3 sdt lada hitam
  2. -2 sdt bubuk bawang putih
  3. -1sdt bubuk bawang bombay
  4. -1sdt pala( di tumbuk halus )
  5. -2sdt peterseli kering
  6. -2sdt lada merah
  7. -2sdt bubuk cabe

VERSI #2

Ingredients
Original recipe makes 1 1/2 cups
  • 3/4 cup salt
  • 1/4 cup ground cayenne pepper
  • 2 tablespoons ground white pepper
  • 2 tablespoons ground black pepper
  • 2 tablespoons paprika
  • 2 tablespoons onion powder
  • 2 tablespoons garlic powder
 
Directions
  1. While holding a pint canning jar at an angle, add ingredients to create a "sand art" look. The salt and cayenne may be divided into smaller portions and used to separate other spices. I found it simplest to use 7 cups--one with each spice in it--and add them to my jar with a spoon, as I want to create the special look.

VERSI # 3

  • 2 sendok teh garam
  • 2,5 sendok teh garlic powder
  • 3-4 sendok teh paprika – menurut yang bikin resep, dia biasanya pakai 4 sendok teh
  • 1 sendok teh lada – kalau ga mau terlalu pedes, bisa ½ sendok teh
  • 1 sendok teh onion powder
  • 1 sendok teh cayenne pepper
  • 1 sendok teh oregano flakes
  • 1/2 sendok teh oregano powder
  • 1 sendok teh thyme powder

Ramuan tepung ini dimaksudkan untuk membuat ‘hot and crispy’ pelbagai bahan seperti : tempe, tahu, kentang, terung dsb.
Blog/website yang berasal dari Amerika umumnya hanya membuat resep ‘crispy’ sedangkan variant ‘hot and crispy’ kelihatannya dari Indonesia atau Pakistan/India. Kemungkinan KFC membuat hot and crispy untuk pasar negara-negara itu saja. Tetapi  di Kanada di restaurant kecil sering dijumpai gorengan kentang dengan rasa hot and crispy ini. Kelihatannya flavour ini pengaruh dari bumbu curry dan cajun yang memang populer di kalangan orang bule’'.
Banyak sekali dijumpai variasi dari resep ini yang masing-masing mengemukakan bumbu atau bahan untuk membuat rasa ‘hot’ dan tekstur ‘crispy’.
Rasa hot atau pedas masing-masing resep menduga dari bahan : cabe/ketumbar/kencur/jinten/curry mix dicampur atau sendiri-sendiri.Tekstur crispy atau renyah diduga berasal dari bahan : tepung beras/kentang/sagu/maizena atau soda kue.
Karena banyaknya variasi resep untuk ramuan tepung ini maka bung admin merasa resep ini belum ada yang mantap dan perlu dipelajari dan diuji-coba dulu .

Bahan:

1 cangkir tepung beras/terigu
1/2 cangkir tepung kentang/sagu/maizena

1 sdm garam (garam meja)

1 sdt ketumbar bubuk
1 sdt kencur bubuk
1 sdt jinten bubuk
 or use curry mix powder

½ sdm lada hitam
¼ sdt cabe bubuk
½ sdm bubuk bawang putih

1 sdm bubuk bawang merah
2 telur

1 sdt soda kue
¼ cup
air

Rice Flour Crepes

Ingredients:

Yield:10-12 crepes
Units: US | Metric

Directions:

  1. In a medium sized mixing bowl, beat together all ingredients until smooth.
  2. Pour, using 1/4 cup measure into a medium sized, hot, non-stick (or greased) skillet.
  3. Turn skillet to thinly, evenly distribute batter in a circle.
  4. Cook about 30 seconds per side.
  5. (I only cooked one side, then used filling for Polish Nalesniki #48360 with a pinch of nutmeg and then a touch of cream in pan when baking).

Gluten-Free Flour Tortillas

Gluten-Free Flour Tortillas

 

Introduction

If you are gluten-free like me, you should know how hard it is to find a recipe for gluten-free tortillas that bend without breaking; that are big enough to actually wrap around something; and that taste like flour tortillas! Well look no further... here it is!

Number of Servings: 8

Ingredients

    You will need:
    2 c. Gluten-free all purpose flour (or 2 c. White rice flour)
    2 tsp. Xanthan gum or Guar gum
    1 tsp. Gluten-free baking powder
    2 tsp. Brown sugar
    1 tsp. Salt
    1 c. Warm water

Directions

1) Add the dry ingredients to a large mixing bowl and mix the ingredients thoroughly.
2) Add the cup of warm water to the bowl and mix the dry ingredients into the water with your hand until its an even mixture.
3) Separate the dough into 8 pieces and roll each piece into a ball. Place all but one of the dough balls back into the bowl and cover with plastic wrap until you're ready to work with them.
4) Sprinkle a clean, flat surface with a bit of buckwheat flour and then roll your dough ball into a roughly circular shape and get as thin as possible.
5) Throw the tortilla onto a hot griddle (I use a cast iron griddle on medium heat with just a smidge of olive oil) and let it cook approximately 1-2 minutes or until it has started puffing up and the bottom side is developing those lovely brown spots. Flip the tortilla and cook the other side until is toasty as well.
6) Slide the cooked tortilla onto a covered plate to stay warm and repeat from step 4 until you've cooked all 8 tortillas. I generally roll one tortilla out while another is cooking, so that there is always a tortilla on the griddle.
7) Serve these warm with your favorite filling!

Quick Flat Bread Tortilla Wraps (Gluten-Free)

This recipe makes approx. 6 flatbreads (using a 6" frying pan). Serve these flat breads warm or cold with a suitable filling of your choice.

Ingredients
 
100 g Rice or Buckwheat/Gluten Free White/Brown Bread Flour
180 ml Water
2 tbsps Oil
¼ tsp Salt

Method

  1. Mix together the flour, salt, water and 1 spoon of oil.  
  2. Leave to stand for 10/15 minutes.
  3. Heat a little oil in a heavy frying pan until starts to smoke. Your mix should resemble a smooth pancake batter.
  4. Stir the batter then put 2/3 spoonfuls onto the hot pan. (Smooth the batter out to form a circle if necessary).
  5. Cook on a medium heat until air bubbles appear. Turn the flatbread and cook the other side.
  6. Either roll up with your favourite filling and enjoy straight away, or stack cooked flat bread wraps on a plate (with a sheet of baking paper between if necessary), covering with cling film or foil to stop them from drying out.
 
Temperature & cooking time:
2/3 minutes either side on a medium heat

Sweet and Sour Sauce (Mango)

 

 
Ingredients:
1 cup slightly underripe mango, peeled and roughly chopped
1/4 cup vinegar, lime juice

1 thumb sized ginger, peeled and sliced
sugar or palm sugar(the amount will have to depend on how sweet the mangoes are and your preference)
30 water
1 Tbsp flour dissolved in 3 Tbsp water, cornstarch, maizena


Direction:
1. Place mango, sugar, 30 cc water, and vinegar in a blender and blend until pureed and sugar has been dissolved.
2. In a small bowl, dissolve flour in water
3. Heat sauce pan in medium heat. Add mango puree and vinegar. Stir to incorporate.
4. Let the mixture simmer for 3-4 minutes.
5. Add flour mixture 1 tsp at a time until the desired thickness is reached.
6. Remove from heat then strain to remove anu undissolved flor and mango fibers. Use the back of a spoon to help it along.
7. Let it cool and serve with lumpia or other fried dishes as a dipping sauce.

Basic Curry Powder

There are hundreds of recipes that can be used to make a curry powder.
Here I have listed a few that I sometimes use.
You can adapt these recipes to suit your own taste and preferences.

Description:

Basic curry powder:
 
2 tsp ground coriander(ketumbar)
1 tsp ground cumin (jinten)
1/4 tsp turmeric (kunyit)
1/4 tsp cayenne/ chilli powder


‘Sweet’ Curry powder: 

1 tsp ground coriander
1 tsp ground cumin
1/2 tsp turmeric
1/2 tsp ground cinnamon (kayu manis)
1/2 tsp ground cloves (cengkeh)
1/4 tsp cayenne/ chilli powder
1/4 tsp spanish paprika


Curry powder: 

1 tsp ground coriander
1/4 tsp ground cardamom (kapulaga)
1/2 tsp ground cumin
1/2 tsp ground ginger
1/2 tsp ground mustard
1/4 tsp ground cloves
1/4 tsp fenugreek (klabet, kelabat)

about 1/2 tsp turmeric
1/4 tsp cayenne/ chilli powder
