Aloo curry

 

Aloo curry (Traditional gujarati way of making) has special place in my heart since childhood. This is great, effortless recipe. This curry always helps me when I’m running out of vegetables. Even if you having potluck or get-to-gather, this is the curry which so delicious yet so easy and quick to make and you know what, your curry will always running out first and people will remember it forever, definitely from my experience 
Ingredients
  • Oil – 5 TBS
  • Mustard seeds and cumin seeds – 1TSP
  • Curry leaves – 4-5
  • Green chilies – 2
  • Asafetida – Pinch
  • Tomatoes – 2
  • Boiled potatoes – 4
  • Crushed ginger – 1TBS
  • Turmeric powder – ½ TSP
  • Cumin coriander powder – 1TBS
  • Garam masala – ½ TBS
  • Garlic red chili chutney – 1TBS
  • Salt – As pet taste
  • Water – 1 & ½ Cup
  • Cilantro – For garnishing
    Method
    • Heat up oil.
    • Add mustard and cumin seeds to it and let it crack.
    • Following add curry leaves, green chilies and asafetida.
    • Add cut tomatoes to it and sauté it for 30seconds.Kepp your flame on medium.
    • Add crushed ginger and turmeric powder and mix well.
    • Peel and cut into 1inch dice boiled potatoes and add to it.
    • Now add cumin coriander powder, garam masala and garlic red chili powder to it.
    • Mix it and let all spices mix up with potatoes. Watch out that your potatoes don’t break much.
    • Let to cook for next one minute.
    • Now add warm water to it and cover pot and let all simmer for next 5minutes.
    • Garnish with cilantro and you are good to go with potato currry.
