Gado-gado/Karedok ala Bule

Ingredients

  • 1/4 cup chopped almonds
  • Salad:
  • 1 head cabbage, shredded
  • 3 carrots, shredded
  • 1 red bell pepper, thinly sliced
  • 1/2 red onion, chopped

  • Dressing:
  • 1/3 cup olive oil
  • 1/4 cup cider vinegar
  • 2 tablespoons peanut butter, slightly melted
  • 2 tablespoons maple syrup
  • 2 tablespoons tamari (gluten-free soy sauce)
  • 1 tablespoon grated fresh ginger
  • 1 teaspoon sesame oil
  • 1 teaspoon red pepper flakes
  • 1/2 teaspoon salt
  • 1 cup crispy chow mein noodles, or more to taste
